seasonal menu or a 2/3-course dinner.

The extensive dinner menu of Brasserie Martinus is suitable for every occasion. Inspired by local cuisine and intercontinental influences, the menu is full of delicious dishes, with a preference for ingredients that have been regionally sourced.

You can expect dishes that have appeared on the menu over the course of Van der Valk’s rich history and are now returning with a contemporary twist, such as our delicious steak grilled in herb butter. But also contemporary dishes are on the menu, such as one of our chef’s favourites, the Moroccan fish tagine. A traditional Moroccan dish which incorporates French La Ratte potatoes and Dutch cod. Vegetarians are also at the right place at Brasserie Martinus! Try one of today’s trendiest pasta alternatives: our pumpkin spaghetti with stewed beans and tomato. Every season, the new and best seasonal dishes are selected and composed by our chef. In short, at Van der Valk Hotel Eindhoven you can enjoy delicious seasonal dishes all year round. This time, our chef was inspired by the ultimate flavours of the mussel season. The flavours of spring take centre stage in this menu!
